Yes, active starter will work. You could also leave out the flour and water and use all starter, if you’re baking with sourdough because of a gluten sensitivity. Don’t be afraid to experiment! If it flops, it cost you pennies and you will have learned something.😉 (And it will probably be edible even if it flops!)
